I have two of these. Been using them for 2 years. They work well for me when I do the following: I put them in my oven and turn my oven to it's max temp for 30 mins. While the pans are heating, make pizza dough from

500g bread flour
10g salt
7g instant yeast
about 350ml of lukewarm water ( will vary by 10% with the flour you are using)
A good glug of olive oil

Mix it all together in a bowl until you get a ball of dough.

Knead the dough for 10 minutes. You know when the dough has been kneaded enough when you can stretch the dough and it does not snap.
Roll the dough into a flattish ball shape. I place the dough in a big bowl and let it rise for 1 hour in a coolish place. 30 mins is probably enough.

After 1 hour, the pizza crispers are smoking, literally.

Knead the dough until all air has been expelled. Then divide into four equal sized balls. Put the balls in a dish and cover liberally with olive oil. Let...
