It must first be seasoned a couple of times with warm cooking oil. The instructions say that thereafter it only needs cleaning with plain water and kitchen roll. Sounds counter-intuitive but IT WORKS. Anything that does appear stuck miraculously detaches with no effort after a short immersion in water . Magic and , best for me, quick. Always looks like new.
Good usually but it does buckle
I have quite a few bits of anodised aluminium (including another from this manufacturer). I've been very happy with it. Whilst this is good most of the time it has buckled twice. When I've put this in a pre-heated oven at gas mark 9 it has been fine. However, twice I've cooked a side of salmon on it as gas mark 7 and it has buckled badly - once it's come out of the oven and cooled it has gone back to normal (and no sign of lasting damage). I don't know why this is happening - possibly because the salmon is only using half the tray and there's some sort of unevenness (which seems unlikely) or maybe it doesn't like that particular temperature(?) Nonetheless the product blurb assures me that it will not buckle and that's simply not the case. This aside it has worked well - the heat transmissions is much better than other materials.

I bought these a while ago, having got fed up with non-stick trays that wore out quickly. The first time I used them, I just greased them well and was delighted when the fragile sponge just slid out neatly and without any sticking! They were easy to clean too. Would highly recommend and as my non-stick items wear out, I will definitely replace them with Mermaid. My Mermaid roasting tin and cake tins all work really well too.
