Had previously purchased a tray of this size & shape from another retailer, which was supposed to be non-stick. It wasn't. Nor did the non-stick stand up to the washing it then required to keep it usable.
So, that went back for a refund & I looked for something else in the same dimensions. This tray is not, & does not claim to be non-stick. However, so far it has proven to be fairly hard to stick something to, and even if food does stick a bit - and thus get a lovely brown crust (on chicken portions for example) - it comes clean much more easily, plus you can scrub it if you need to (we don't have a dishwasher).
Hard anodised is definitely the way to go. I anticipate years of use from this tray & am extremely pleased with it. It has already become my "go to" baking tray for any dish it is deep enough for. I used it for Yorkshire Pudding the other day & even that didn't stick.

Brought from Lakeland Sadly, this warped on first use at only 180 degree when cooking some chicken legs and thighs which really surprised me given how strong the item felt, not flimsy like cheaper stuff.
Cooking results were very good though, Its important to season the item following the advice on the Mermaid website. Also using a pastry brush, lightly grease the base before cooking and things wont really stick. AVOID greasing with olive oil because olive oil goes sticky at high heat and produces a sticky film which is very hard to remove. Use Ground nut oil. If any food residues do stick after cooking, a short soak with a bit of washing up liquid allows the item to be washed and cleaned easily and it comes up as good as new. The excellent heating properties of the aluminium means you can reduce your oven temperature by at least 10 degrees and things cook a little quicker.
The item can be used direct on the cooker which is brilliant for making gravy, metal...
Good but would be better if non stick
I've had two mermaid baking trays for a couple of months now and they are very sturdy and you can really scrub them without damaging them. I think they will last a long time. The only downside, as others have mentioned, is that they are not non-stick. I think the metal is quite porous when new, which makes things stick really badly; but now after a couple of months of use, they are better but still not truly non-stick. Well I guess you can't have it all!
